Ranch Pancakes!

Ranch Pancakes....hmmmm, what are those?! No worries, folks, they are pancakes. But they are homemade on the ranch...and they are delicious!! Something I know to be true....homemade is always better than anything out of a box. So, with that, try this simple recipe for my Ranch Pancakes and I'm sure you will agree!

Here's what you'll need:

  • 1 1/2 cups of 2% milk

  • 4 TB of White Vinegar

  • 2 cups of All Purpose Flour

  • 2 tsp of Baking Powder

  • 4 TB of Sugar

  • 1 tsp of Baking Soda

  • 1 tsp of Salt

  • 2 Eggs

  • 4 TB of Buter, melted

First, mix the milk with the vinegar and let sit at least 5 minutes. Plug in your electric skillet and set to 350 degrees. While this is sitting mix your dry ingredients: flour, baking powder, sugar, baking soda, and salt. Once mixed crack 2 eggs and add to dry mixture. Pour in milk mixture. Stir by hand just until all ingredients are mixed. Pour in melted butter and mix. Once your skillet is hot ladle the pancake batter into circles. I usually cook 6 at a time, but it depends on how big you make your pancakes and the size of your skillet. I also don't spray my skillet, but I have a non-stick version so you may want to do this. Once the pancakes begin to cook you will notice bubbles that rise to the surface. Once the first bubbles start to pop I turn them over.

Depending on your preference for how brown you like your pancakes this may vary. Something I've learned about making pancakes...practice makes perfect. Serve hot with butter, syrup, and your choice of fixings. Enjoy!!
