Steak Tips & Shane's Birthday!

Today is my hubby's birthday! We celebrated this past Sunday with one of his favorites...Steak Tips. These little buggers are SO good! I haven't shared a recipe in a while so I thought this would be the perfect time. Here goes:

 

 

Cheyenne's Steak Tips

 

Cut USA-Raised steak into small strips or chunks (I did both this past weekend). I'm not really particular about what cut of meat I use, but I am very particular that it's USA-Raised.....and you should be too. We raise our own grass-fed beef so I know where it came from and exactly what it is. Use as much or as little as you want to. These are also good leftover so I never worry about making too much.

Make the batter.

 

  • 2 eggs

  • 1 cup all purpose flour

  • 1/2 cup milk

  • 2 tsp seasoning salt (I use Lawry's)

  • 1/2 tsp. pepper (or more if you like pepper)

  • A dash of garlic powder

  • Oil to fry in

Mix all ingredients together. It will be super thick. That's how it's supposed to be so it will stick to the meat. 

Once combined really well throw in a small handful of meat and mix well to ensure each piece of meat is completely coated in batter.

Let the excess drip off a bit before placing in hot oil to cook.

I cook over medium-high heat on my gas range. You can use a deep fryer if you'd like to or an electric skillet. I watch closely and turn them when they begin to look golden brown.

Fry until both sides are golden brown.

Continue repeating the frying process until all meat is cooked. I made so much for Shane's birthday that I had to make another batch of batter. He was happy though because he had lots of leftovers. Here they are finished......YUM!

Serve these steak tips hot. I love to make a horseradish sauce to serve with them. I basically use a little horseradish in ketchup. It gives these a little extra kick. Some folks use plain ketchup or barbecue sauce on the side. Whatever you like best will go well with these yummies. I served them with potato/bacon wedges and of course a chocolate birthday cake....my hubby's fave also. Where would we be without the occasional food celebration on special occasions?! :)

 

If you happen to see my hubby today wish him a great day.....oh wait, you won't because we are calving and he's out working on the ranch (you know.....he's out there - you just can't see him from the road). Oh well, he will read this later so I want to wish him a very Happy Birthday! He is our everything!
